Ingredients

TRUFF Oil Vinaigrette:

1/3 cup olive oil

1 tablespoon TRUFF White Truffle Oil

1/4 cup red wine vinegar

4 garlic cloves, peeled and minced

1 teaspoon granulated sugar

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1 teaspoon salt

1/4 teaspoon black pepper

1 cup cherry tomatoes, quartered

1/2 cup red onion, peeled and chopped

1 cup fresh corn kernels

1 cup red bell pepper, chopped

1 cup yellow bell pepper, chopped

1 poblano pepper, chopped

1/2 cup fresh cilantro, chopped

2 scallions, trimmed and sliced

1 15 oz. can black beans, drained and rinsed

1 15oz. can black-eyed peas, drained and rinsed

Cowboy Caviar

This side dish went viral on TikTok, and for good reason!

This Cowboy Caviar with a TRUFF flare will be the centerpiece of your barbecues all summer long. Fresh summer vegetables like tomatoes and corn, combined with our decadent TRUFF White Truffle Oil Vinaigrette, make for the perfect, zesty addition to any dinner party. Serve this dish as a side or pair with some tortilla chips to serve as a dip.

Instructions

  1. Place olive oil, TRUFF White Truffle Oil, vinegar, garlic, sugar, cumin, chili powder, salt, and pepper in a large bowl and whisk to combine. 
  2. Add the tomatoes, red onion, corn, bell peppers, poblano peppers, cilantro, scallions, black beans, and black-eyed peas to the bowl with the vinaigrette and toss to coat and combine. 
  3. Cover and refrigerate for 30 minutes before serving. 
  4. Serve cowboy caviar with lime wedges and tortilla chips.
