Ingredients
2 teaspoons olive oil
4 eggs
4 large English muffins, halved and toasted
½ cup jarred roasted tomatoes, drained and sliced
½ cup red onion, peeled and thinly sliced
2-3 tablespoons crispy garlic slivers or chips
Jalapeño Honey Bacon:
8 slices bacon
⅓ cup honey
3 tablespoons TRUFF Jalapeño Lime Hot Sauce
Avocado Spread:
1 avocado, peeled
2 teaspoons lime juice
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh scallions, chopped
Salt and pepper, to taste

On a perfectly toasted English muffin, indulge in our zesty hot honey bacon made with our Jalapeño Lime Hot Sauce. This bacon pairs perfectly with the homemade avocado spread and delicious sunny side-up eggs. Topped with tomatoes, red onion, and crispy garlic, this sandwich is the ideal morning meal.
Instructions:
Preheat the oven to 400°F and line a large baking sheet with parchment paper.
Place the slices of bacon evenly on the prepared baking sheet.
Place the baking sheet in the oven and bake for 10 minutes or until the bacon renders.
While the bacon is rendering, place honey in a microwave-safe bowl and warm until runny, about 15 to 20 seconds.
Add TRUFF Jalapeño Lime Hot Sauce to the bowl and whisk to combine.
Remove the baking sheet from the oven and carefully pat the bacon dry with paper towels.
Brush both sides of the bacon with the hot honey and return to the oven.
Bake for an additional 10-15 minutes or until the bacon is brown and crisp.
Remove the bacon from the oven and set it aside on a wire rack while you prepare the remaining breakfast sandwich components.
To make the avocado spread, place avocado, lime juice, cilantro, and scallions in a medium bowl.
Using a fork, mash the ingredients together until well blended.
Season to taste with salt and pepper.
Heat olive oil in a large nonstick skillet over medium heat.
Once hot, gently add the eggs and fry for five minutes.
To assemble the sandwiches, spread the avocado mixture over toasted English muffins. Top with the bacon, fried eggs, roasted tomatoes, red onion, and crispy garlic.
