Ingredients

3 tablespoons olive oil, divided

4 oz. vegan sausage, crumbled

1-2 tablespoons TRUFF Original Hot Sauce

1 1/2 cup gold potatoes, diced

1 1/2 sweet potatoes, diced

1/2 cup yellow onion, peeled and diced

4 garlic cloves, peeled and minced

1 cup red bell pepper, diced

2 cups kale, stems removed and chopped

Salt and pepper to taste

This dish is full of veggies, vegan sausage, and the delicious taste of TRUFF. What sets this hash apart is using TRUFF Original Hot Sauce as a marinade for the vegan sausage, ensuring that the entire dish is infused with spice. Instructions

  1. Heat 1½ tablespoons of oil in a skillet. 
  2. Once hot, crumble the vegan sausage into the skillet and sear for 2-3 minutes. 
  3. Add TRUFF Original Hot Sauce, stir to combine with the sausage, and cook until the sausage is heated thoroughly. 
  4. Remove the sausage from the skillet and set aside on a paper towel-lined plate. 
  5. Return the skillet to the heat and add the remaining 1½ tablespoons of oil. 
  6. Once hot, add the potatoes to the skillet in an even layer.
  7. Cook for three minutes or until the potatoes have begun to lightly brown. 
  8. Flip the potatoes and continue to cook for two minutes before adding the onions, garlic, bell pepper, and kale. 
  9. Sauté for five minutes or until the veggies are tender and the kale has wilted.
    1. Return the seasoned sausage to the skillet and stir to combine with the veggies, continuing to cook and allowing the sausage to reheat. 
    2. Season to taste with salt and pepper before serving.
