Cauliflower Pizza Crust:
1 head cauliflower, cut into florets
1 egg
3/4 cup mozzarella cheese, grated
1/4 cup parmesan cheese, grated
1 1/2 tablespoons cornstarch
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
Pinch of black pepper
2/3 cup mozzarella cheese, grated
2-3 tablespoons blue cheese crumbles
2-3 tablespoons TRUFF Buffalo Sauce
2 tablespoons fresh tomatoes, diced
2 tablespoons fresh scallions, chopped

Instructions
Preheat the oven to 425°F
Place cauliflower florets in a food processor and pulse into rice-sized pieces.
Fill a pot with water and bring to a boil.
Add the cauliflower and cook for two minutes.
Drain and rinse with cold water.
Squeeze excess liquid from cauliflower.
Add the cauliflower, egg, mozzarella, parmesan, cornstarch, garlic powder, onion powder, oregano, salt, and pepper to a bowl and mix to combine.
Line a large baking sheet with parchment paper and place the mix on the sheet in a thin, even circle.
Place the sheet in the oven and bake for 20-30 minutes or until golden brown and moderately crisp.
Remove from the oven and sprinkle with mozzarella and blue cheese.
Drizzle with TRUFF Buffalo Sauce and return to the oven.
Bake for 15 minutes or until the cheese has melted.
Remove from the oven and top with tomatoes, scallions, and pickled red onions.
Garnish the pizza with leafy celery tips and serve with blue cheese dressing and TRUFF Buffalo Sauce on the side for dipping and extra drizzling.
