Buffalo Chicken Quesadilla

Ingredients
2 tablespoons butter
2 garlic cloves, peeled and minced
1 1/2 cups rotisserie chicken, pulled or chopped
1/4 cup TRUFF Buffalo Sauce
4 large flour tortillas
1 1/2 cups mozzarella, shredded
1 1/2 cups cheddar, shredded
1/2 cup fresh tomatoes, diced
1/4 cup red onion, peeled and minced
1/4 cup fresh cilantro, chopped
1 tablespoon olive, vegetable or corn oil, divided
Salsa, sour cream, guacamole, and lime wedges, to serve on the side

Instructions
Melt the butter in a skillet.
Add garlic and sauté for one minute.
Add chicken and buffalo sauce to the skillet and stir to combine.
Cook for five to six minutes or until the chicken has reheated, stirring frequently.
Remove from the heat.
Preheat another skillet.
Divide mozzarella, cheddar, seasoned buffalo chicken, tomatoes, onion, and cilantro between the tortillas, placing the filling ingredients onto one side of each tortilla.
Fold the tortillas in half, concealing the filling.
Once the skillet has preheated, drizzle with a little oil, and add the quesadillas.
Toast for two to three minutes per side or until the tortillas are golden brown and the cheese has melted.
Remove and cut each quesadilla into wedges.
Serve with salsa, sour cream, and guacamole on the side for dipping.
Garnish with some lime wedges.
