6 slices of bacon, diced

1 bag frozen O’Brien potatoes

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1 rotisserie chicken, meat removed and pulled or chopped

1 jar TRUFF Spicy Mayonnaise

1 can evaporated milk

2 eggs

2 cups cheddar cheese, shredded

1 cup blue cheese crumbles

1/3 cup fresh scallions, chopped

TRUFFalo Chicken & Potato Casserole

This is not your average casserole!

Our TRUFF Spicy Mayonnaise is combined with cheese, bacon, potatoes, and rotisserie chicken to create a hearty, cozy casserole that is perfect for the winter months.

Instructions

  1. Preheat oven to 350°F.

  2. Place bacon on a prepared sheet and cook for 10 minutes or until the bacon is crisp.

  3. Remove the bacon from the oven and set aside to drain.

  4. Place potatoes in a casserole dish and sprinkle with garlic powder, onion powder, paprika, and salt.

  5. Top the potato layer with rotisserie chicken.

  6. Place mayo, evaporated milk, and eggs in a bowl and whisk to combine.

  7. Pour the mixture over the chicken and sprinkle with shredded cheddar and blue cheese crumbles.

  8. Place in the oven, uncovered, and bake for 45-55 minutes or until bubbly and lightly browned.

  9. Remove from the oven and set aside to rest for 10 minutes before topping with the scallions and bacon.
