Limoncello Gnocchi

Ingredients
1 package frozen gnocchi
4 tablespoons butter
3 garlic cloves, peeled and minced
2 shots limoncello
1/4 cup lemon juice
2 teaspoons lemon peel
2 tablespoons cream cheese
1/2 cup reserved gnocchi pasta water
Salt and pepper, to taste
2-3 teaspoons TRUFF White Truffle Oil
2-3 tablespoons parmesan cheese, grated
2-3 tablespoons fresh parsley, chopped
Pinch of crushed red pepper flakes

This refreshing dish uses an inventive combination of ingredients to mimic a luxurious meal without a huge time commitment. Limoncello, gnocchi, and TRUFF White Truffle Oil are combined to create a buttery, creamy, lemon-centric meal.
While the gnocchi sauce brings a bright and vibrant flavor, TRUFF’s White Truffle Oil brings the earthy and aromatic notes, creating a balanced and delicious meal.

Instructions
Fill a pot with salted water and bring to a boil.
Add the gnocchi, and cook according to the instructions on the package.
Remove 1/2 cup of pasta water from the pot before draining and rinsing. Set aside.
Melt butter in a skillet.
Add the garlic, and sauté for one minute or until fragrant.
Remove the skillet from the heat and add the limoncello.
Return the skillet to the heat and cook, whisking occasionally, for one to two minutes.
Add lemon juice, lemon peel, cream cheese, and pasta water to the skillet, whisk to combine, and bring to a simmer.
Simmer for two to three minutes or until the sauce begins to thicken.
Once the sauce has thickened, add the cooked gnocchi, and gently stir to coat and combine.
Transfer the sauced gnocchi to a serving platter and drizzle with TRUFF White Truffle Oil.
Top the gnocchi with parmesan cheese, parsley, and pepper flakes before serving.
