1/2 cup shredded monterey jack cheese

1 tablespoon fresh chives, chopped

Cheesy Mayo Mashed Potatoes

To achieve the smooth texture of this classic side dish, we blend our TRUFF Mayonnaise with Yukon Gold potatoes. This umami-rich blend is topped with a generous layer of cheese for a golden brown crust baked to perfection. This mouthwatering recipe is versatile and can be enjoyed with any entrée.

Instructions

  1. Fill a large pot with water and season with salt.
  2. Bring to a boil over high heat and cook until the potatoes are fork-tender.
  3. While the potatoes are cooking, place milk, cream, mayonnaise, and butter in a small saucepan.
  4. Warm the creamy mixture over medium-low heat, stirring frequently while the butter melts to blend.
  5. Preheat oven to 400°F.
  6. Once the potatoes are tender, drain, and return to the pot.
  7. Using a potato masher or ricer, mash potatoes until smooth.
  8. Add the creamy mixture and whisk to combine.
  9. Season the mashed potatoes to taste with salt and pepper.
    1. Transfer mashed potatoes to a large casserole dish and spread out in an even layer.
    2. Cover the top of the mashed potatoes in cheese and place in the oven.
    3. Bake for 20-25 minutes or until the cheese has melted and the edges are golden brown.
    4. Remove from the oven and garnish with chives before serving.
