Ingredients

Marinade:

1/4 cup pineapple juice

2 tablespoons white wine vinegar

2 tablespoons olive oil

1 tablespoons chipotle peppers in adobo, minced

1 tablespoon TRUFF Jalapeño Lime Hot Sauce

2 teaspoons achiote or annatto

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

2 pounds pork loin, sliced

1/2 pineapple, peeled, cored, and sliced

Soft corn tortillas, diced red onions, fresh cilantro, avocado, and limes, for serving

Pork & Pineapple Tacos

You’ll be surprised how easy it is to make al pastor-inspired tacos at home

Our TRUFF Jalapeño Lime Hot Sauce, a zesty combination of green jalapeños, black truffle, and lime, combined with a few simple ingredients, creates a delicious marinade.

Serve the marinated pork and pineapples with typical taco toppings and extra TRUFF Jalapeño Lime Hot Sauce, and you’ll have tacos that rival any you’d pick up from your local cantina!

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with aluminum foil.

  2. Place pineapple juice, vinegar, olive oil, chipotle peppers, TRUFF Jalapeño Lime Hot Sauce, achiote, chili powder, cumin, oregano, and salt in a bowl, whisk to combine.

  3. Place the pork loin slices in a sealable container and add the Jalapeño Lime marinade, coating the pork.

  4. Seal and refrigerate for at least 1 hour.

  5. Transfer the marinated pork and extra marinade to the baking sheet in an even layer.

  6. Roast for 20-25 minutes or until the pork is cooked through and nicely browned.

  7. Remove from the oven, transfer any pan drippings to a bowl, and let the pork rest for 10 minutes.

  8. Increase the oven’s heat to high broil and line another baking sheet with foil, spritzing with cooking spray.

  9. Add the pineapple slices and drizzle with a tablespoon of the reserved pan drippings.

  10. Broil for four to five minutes or until the pineapple is charred.

  11. Remove from the oven and set aside to cool for five minutes.

  12. Slice pork and pineapple into bite-sized pieces.

  13. Serve the pork and pineapple with the additional taco ingredients like tortillas, red onion, avocado, cilantro, and TRUFF Jalapeño Lime Hot Sauce.
