Ingredients

4 thin boneless skinless chicken breasts

1/2 teaspoons salt

1/4 teaspoon black pepper

2 tablespoons olive oil

1/2 cup yellow onion, peeled and diced

1/2 cup red bell pepper, diced

1/2 cup green bell pepper, diced

2 cups cremini or baby bella mushrooms, quartered

4 garlic cloves, peeled and minced

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon dried rosemary

1/2 cup red wine

1 1/2 cups TRUFF Arrabbiata Pasta Sauce

3/4 cup mixed Italian olives, pitted

2 tablespoons fresh parsley, chopped

2-3 tablespoons parmesan, grated

1 lb spaghetti, cooked according to the instructions on the package

Spicy Chicken Cacciatore

Bring Italy right to your kitchen with this Spicy Chicken Cacciatore!

This is not your ordinary cacciatore dish. Featuring seared chicken breast, bell peppers, mushrooms, onions, and olives simmered in our Arrabbiata Pasta Sauce, this recipe packs a whole lot of heat. Serve this delicious blend of ingredients with al dente pasta for the perfect at-home meal!

Ingredients

  1. Pat chicken breasts dry with paper towels and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Once hot, place the chicken in the skillet and sear on both sides until golden brown.
  4. Remove the chicken from the skillet and set aside to rest on a plate.
  5. Add the onion, bell peppers, garlic, mushrooms, thyme, oregano, and rosemary to the skillet, and sauté until the veggies for 3-4 minutes.
  6. Deglaze the skillet with wine, stir to combine, and bring to a simmer.
  7. Simmer for 4-5 minutes or until the wine has almost completely evaporated.
  8. Add the TRUFF Arrabiata Pasta Sauce and olives, stir to combine with the veggies, and bring to a simmer.
  9. Once simmering, return the chicken to the skillet, reduce heat to low, and cover.
    1. Cook for 12-15 minutes, stirring occasionally, or until the chicken is cooked through.
    2. Uncover and sprinkle the cacciatore with parsley and parmesan.
    3. Serve with cooked pasta on the side.
