Ingredients

TRUFF Dip:

½ cup TRUFF Mayonnaise

¼ cup Greek yogurt

1 tablespoon Worcestershire sauce

1 tablespoon lemon juice

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon dried dill

Salt and pepper, to taste

2 medium zucchini, cut into sticks

1 teaspoon salt

Frying oil

1 ¼ cup all-purpose flour

2 eggs, beaten

1 cup panko bread crumbs

¼ cup parmesan cheese, grated

1 teaspoon dried oregano

½ teaspoon garlic powder

Zucchini Fries

If you’re on the hunt for a crispy side dish to add to your weeknight dinners, look no further. These crispy zucchini fries and truffle-infused dipping sauce are so addictive, you’ll be making them regularly.

The zucchini fries are breaded in a savory combination of panko bread crumbs, parmesan cheese, oregano, and garlic. They are then paired with a dipping sauce that uses a combination of our TRUFF Mayonnaise, Greek yogurt, lemon juice, garlic, onion, and dill for a refreshing and savory condiment.

This dish is great for a crowd or for casual snacking!

Instructions

  1. Place TRUFF Mayonnaise, yogurt, Worcestershire sauce, lemon juice, garlic powder, onion powder, and dill in a bowl, whisk to combine.

  2. Season to taste with salt and pepper and transfer to a sealable container, refrigerate until ready to use.

  3. Place zucchini sticks in a large bowl and season with salt.

  4. Transfer the seasoned zucchini to a paper towel-lined baking sheet.

  5. Place a few more sheets of paper towels on top of the zucchini and gently press to expel as much liquid as possible.

  6. Set aside, still sandwiched between the paper towels, to drain further, about 10 minutes.

  7. Meanwhile, place flour in a large shallow bowl.

  8. Place beaten eggs in another shallow bowl.

  9. Place bread crumbs, parmesan, oregano, and garlic powder in a third shallow bowl, stirring to combine.

  10. Fill a large pot 1/3-full with oil or preheat a deep fryer to 350°F.

  11. While the oil is preheating, coat the zucchini sticks in flour, egg, and seasoned breadcrumbs.

  12. Gently press to adhere the crumbs to the zucchini sticks, and place in the hot oil.

  13. Fry for one to two minutes or until the fries are golden brown and crisp.

  14. Remove the zucchini fries from the oil, and set aside to drain on a wire rack-lined baking sheet.

  15. Serve with TRUFF Mayonnaise dip on the side.
